No matter what, there is always white rice at my house. It is a Colombian staple that goes well with any dish (beans, meat, chicken, fish, soups, eggs — anything!). Rice is the first food I learned how to cook, and it is so easy to make.
INGREDIENTS
2 cups of rice
4.5 cups of water
~2 tablespoons of salt
1 piece of butter
3 tablespoons of oil
Juice from 1 lemon
A bit of grated carrots
1 green onion
PREPARATION
Mix all of your ingredients except for the rice in a pot (ideally the pot should be wider than it is tall). Once the water boils, mix in the rice. Stir with a wooden spoon and leave on medium heat until the water evaporates. You’ll notice that small holes will appear in the rice, which means it’s time to set to the lowest heat possible. Cover the rice with a lid, and wait about ~30-40 minutes. Before serving, remove the green onion and mix the rice with a fork.
How should it look? White, dry, spongy, and not sticky.

Abrazos!
